A light vanilla sponge with a fun coconut nest decoration!
How to make

Bake the Sponges
Cream butter and sugar pale. Whisk in eggs and vanilla, then fold in flour. Bake at 180°C for 20 mins until golden.

Prepare the Grass
Toss desiccated coconut with a tiny drop of green food colouring in a bowl until vibrant green.

Decorate
Frost cooled cupcakes with buttercream. Dip edges into coconut and place three mini eggs in the centre.
