Quick Healthy Filling Soup

When you are really short for time and literally don’t have much time even for chopping vegetables then you are going to love this simple quick healthy filling soup. This will make up 6 good size bowls and costs under £2 to make.

How to make

Sauté the Base

Heat a little olive oil in a large stockpot. Fry off the onions and the garlic for a few minutes until they have softened beautifully.

Simmer

Add in the tins of tomatoes, sliced carrots, vegetable stock, and oregano. Bring to a boil, then lower the heat and simmer for 30 minutes until the carrots are tender.

Cook the Orzo

In a separate saucepan, cook the orzo according to the packet instructions until al dente.

Finish & Garnish

Once the carrots are tender, blitz the tomato base using a hand blender until smooth. Stir in the cooked orzo. Serve hot, garnished with a little Parmesan or fresh basil.

Serving: This is really filling and makes a great evening meal with some warm crusty bread for dipping!
