How to make

Sauté the Base
Heat olive oil in a large stockpot. Sauté the onions and garlic for a few minutes until beautifully softened.

Simmer
Add chopped tomatoes, sliced carrots, stock, and oregano. Bring to a boil, then simmer on low for 30 minutes until carrots are tender.

Cook the Orzo
In a separate saucepan, boil the orzo in salted water until al dente, according to the packet instructions.

Finish & Serve
Blitz the tomato base until smooth using a hand blender. Stir in the orzo and garnish with Parmesan or basil.
