Baked Feta & Tomato Lunch
A warming Vegetarian lunch serving 2 people, perfect for colder days when paired with toasted sourdough bread.
How to make

Prep the Feta
Cut the feta into small cubes. Aim for approximately 8 even cubes from the block.

Combine & Mix
In an oven-proof dish, stir together both tomato types, crushed garlic, and 2 tsp of oregano.

Bake
Place the feta cubes on top. Bake for 20 minutes until the cheese softens and starts to turn golden brown.

Final Touch
Drizzle with balsamic vinegar and extra oregano. Serve immediately with warm, toasted sourdough bread for dipping.
