Chorizo and sweet potato soup
Sweet Potato & Chorizo Soup
This is the perfect warming comfort food for this time of year. The colour alone is enough to put you in a good mood and it really does not take long to make.
How to make
Roast the Potatoes
Peel and slice your potatoes using a sharp peeler. Place into a preheated, oiled oven tray for 30 minutes and part roast them to enhance their sweetness.
Sauté the Base
Heat oil in a large pot and fry off the chopped onion until golden brown. Add in your chopped chorizo and garlic, then fry for 10 minutes. Keep a little chorizo back to garnish later.
Simmer
Prepare 1 litre of vegetable stock and add it into the pot along with the part-roasted sliced potatoes. Bring to the boil, then lower the heat and simmer for 10 minutes.
Blitz & Serve
Blitz everything together using your blender until smooth. This soup is wonderfully thick. Serve into warm bowls and garnish with the reserved chorizo.
