Sweet Potato & Chorizo Soup
A vibrant, warming comfort meal serving 4 people—the perfect bowl to brighten up any chilly afternoon!
How to make

Roast the Potatoes
Peel and slice potatoes. Roast in an oiled tray for 30 minutes to enhance their natural sweetness.

Sauté the Base
Heat oil in a pot and fry onion until golden. Add chorizo and garlic, frying for 10 minutes. Reserve some chorizo for garnish.

Simmer
Add 1 litre of stock and the roasted potatoes. Bring to the boil, then simmer gently for 10 minutes until tender.

Blitz & Serve
Blitz until smooth using a blender. Serve into warm bowls and garnish with the reserved crispy chorizo.
