Carrot and Coriander Soup
A warming Vegetarian and Vegan friendly lunch serving 6 people. Perfect for cold days and budget-friendly!
How to make

Sauté the Base
Chop and fry off the onion in a stockpot with vegetable oil until soft and translucent.

Add Vegetables
Add chopped carrots and potato. Stir occasionally for 10 minutes to develop flavour.

Simmer
Add vegetable stock and ground coriander. Bring to a boil, then simmer gently for 20 minutes until tender.
4
Finish & Blend
Add frozen coriander for 5 minutes. Blend until smooth using a hand blender and serve hot.
