Bruschetta Pasta
A fresh, vibrant Vegetarian summer meal serving 4 people, topped with golden, cheesy breadcrumbs.
How to make

Boil & Prep
Boil pasta in a large pot. Quarter tomatoes and place in a large bowl.

Marinate
Add crushed garlic and a big drizzle of oil to the tomatoes. Season well with salt and pepper.

Crispy Topping
Grate bread into crumbs. Mix with parmesan and oil, then fry in a pan until golden.
4
Combine & Serve
Drain pasta and stir into the tomatoes and basil. Top with your crispy parmesan breadcrumbs.
