Bruschetta Pasta

Vine tomatoes are delicious with pasta over the summer months. This recipe is a super easy pasta dish that tastes delicious. Serves four.

How to make

Boil & Prep

Boil the pasta in a large pot. Quarter the tomatoes and add them to a large bowl.

Marinate

Add the crushed garlic, a big drizzle of olive oil, and season with salt and pepper using a pepper mill. Mix well to combine flavors.

Crispy Topping

Turn your bread into breadcrumbs with a grater or blender, then add in the parmesan cheese. Drizzle with olive oil and then gently fry in a pan until golden brown.

Combine & Serve

Drain off the pasta, and add in the tomatoes and basil; mix well. Top with your prepared crispy parmesan breadcrumbs.
