Butternut Squash Carbonara

This is a great one for getting kids to eat butternut squash; creamy, delicious, and full of hidden goodness!

How to make

Roast the Squash

Put 2lb of butternut squash peeled and chopped onto a preheated baking tray oiled along with 2 chopped garlic cloves and 1 tbsp of fennel seeds. Roast until tender.

Blitz the Purée

Allow to cool for a few minutes and then add to a food processor along with 2 tsp of whipping cream and blitz until smooth.

Cook Chorizo & Pasta

In a frying pan fry 130g of diced chorizo until crispy and set aside. Boil your spaghetti in a large pot until cooked.

The Final Mix

Whisk together eggs and Parmesan then pour this over the drained pasta along with the butternut squash purée and stir well. Add in the chorizo and stir through.

Serving: Serve with extra Parmesan shavings for a delicious zesty finish!
