Zesty Courgette & Garlic Spaghetti
A vibrant Vegetarian pasta dish serving 4 people, using fresh courgettes and plenty of garlic.
How to make

Boil & Prep
Boil the spaghetti. Grate the courgette and squeeze out excess moisture using a sieve.

Sauté Courgette
Add olive oil and crushed garlic to a pan, then add grated courgette and cook until soft.

Combine
Drain pasta and add to the courgette. Add lemon zest, juice, and chilli flakes. Mix well until coated.
4
Crispy Topping
Fry up breadcrumbs with olive oil and chopped parsley until crispy and top the pasta.
