Watermelon Salad with Feta Cheese
Watermelon, Feta & Olive Salad
A "Forever Summer" combination that is both savoury and refreshing at the same time.
How to make

Steep the Onions
Slice the red onion into fine half-moons. Steep them in the juice of two limes in a mixing bowl. This turns them a luminescent pink and removes the sharp raw onion burn.

Prepare the Base
Chop the watermelon into large chunks (roughly triangular shapes) and place in a large serving bowl. Crumble or chop the dense, salty feta on top.

Toss & Serve
Add the black olives and the steeped onions (including the pink lime juice). Drizzle with a little olive oil. Add plenty of roughly torn parsley and chopped mint. Mix together gently with your hands.
Serving: Perfect for very hot days when you need something sweet, salty, and hydrating!
