A refreshing Vegetarian combination serving 4 people—savoury and hydrating.
How to make

Steep the Onions
Slice the onion into half-moons. Steep them in lime juice in a bowl to turn them pink and remove the "burn."

Prepare the Base
Chop watermelon into large chunks and place in a bowl. Crumble salty feta on top.

Toss & Serve
Add olives and onions with the juice. Drizzle oil, add torn herbs, and mix gently with your hands.
