Seasonal Feta & Chickpea Salad

A big, beautiful salad is the best way to celebrate delicious seasonal produce! I saw Dr Khan from ITV make this on his instagram and I had to make it but I have added some extras.

How to make

Chop & Cube

Finely chop the onions, tomatoes, cucumber, and pepper. Cube the feta cheese and add everything to a large mixing bowl.

Add Couscous & Protein

Prepare the couscous according to the pack instructions. Once ready, fluff it with a fork and mix into the bowl. Stir in one drained can of chickpeas for an extra protein boost.

Zest It Up

Squeeze in the fresh juice of one large lime and give everything a thorough stir to coat the ingredients in the zesty dressing.

Serve

Serve on warm flatbread or enjoy just as it is. Garnish with a generous handful of pomegranate seeds for a pop of colour and sweetness.
