Lamb Koftas with Pickled Onion
A vibrant and interactive supper that lets everyone build their own perfect wrap!
How to make
Pickle the Onion
Finely grate lemon zest using a sharp zester into a large mixing bowl, then squeeze the juice into a separate medium bowl. To the juice bowl, add onion and a pinch of salt. Leave to pickle lightly until needed.
Mix the Koftas
To the zest bowl, add 500g of lamb, thyme, cumin, 15g pine nuts, chillies, and plenty of seasoning. Mix well (hands are easiest!). Divide the mixture into four equal portions.
Shape & Grill
Shape into balls (or koftas), arrange on a non-stick baking tray, and grill for 15 minutes until browned and cooked through.
Serve
While cooking, add fresh mint to the pickled onion mixture. Bring everything to the table with wraps, yogurt, lettuce, and tomato for everyone to assemble their own.
