Lamb Koftas with Pickled Onion
An interactive family feast serving 4 people—build your perfect wrap with juicy lamb and zesty onions!
How to make

Pickle the Onion
Grate lemon zest into one bowl. In a separate bowl, mix lemon juice, sliced onion, and salt. Lightly pickle until needed.

Mix the Koftas
Combine lamb, zest, thyme, cumin, pine nuts, and chillies. Mix well and divide into four equal portions.

Shape & Grill
Shape into balls or koftas. Arrange on a tray and grill for 15 minutes until browned.

Assemble
Stir mint into the onions. Serve with warm wraps, yogurt, and fresh salad for everyone to build their own.
