Lemon Drizzle Cake
A classic Vegetarian favourite serving 8 people. This simple recipe makes the most delicious light and zesty sponge!
How to make

The Batter
Weigh eggs and match that weight in flour, butter, and sugar. Mix well and stir in grated lemon zest.

Bake
Pour into a greased loaf tin. Bake at 180°C for approx 50 minutes until a skewer comes out clean.

The Drizzle
While baking, mix lemon juice with 85g of caster or icing sugar to create the zesty topping.

Finish
Poke holes in the warm cake with a skewer. Pour the drizzle evenly over the top so it soaks deep into the sponge.
