Lemon Drizzle Cake
As most of you know I do have a bit of a thing for lemons, so it would only be right that my favourite cake is the classic Lemon drizzle. This is such a simple recipe that makes the most delicious light and zesty sponge.
How to make
The Batter
Weigh the 2 eggs and then measure out the same weight in the self raising flour, butter and caster sugar in a large mixing bowl. Mix all the ingredients together. Grate the lemon zest and add to the mixture.
Bake
Pour the mixture into a greased loaf tin. Bake until the middle sets and a skewer comes out clean, approximately 50 minutes at 180 degrees.
The Drizzle
Whilst your cake is baking, squeeze the juice from the lemon and mix in 85g of caster sugar or icing sugar to create your zesty drizzle.
Finish
When the cake comes out of the oven, use a cocktail stick or skewer to poke holes all over the top. Pour the sugar drizzle mixture evenly over the warm cake so it soaks in.
