Sticky Halloumi
Sticky Halloumi served on a bed of green salad is another perfect summertime lunch and to cook the halloumi you can also use the BBQ which gives it extra flavour. Serves two.
How to make
Slice & Container
Slice the halloumi approximately 1cm thick and place it into a tight food container.
The Marinade
Squeeze the lemon and cover the halloumi with the juice. Add in the honey, pop the lid on, and shake well so the cheese is completely covered. Sprinkle over the thyme.
Marinate
Leave to marinate for a few hours; the longer you leave it, the tastier it will be! You can even prepare this the night before.
Fry & Serve
Add olive oil to a frying pan and fry on each side for approx 2-3 minutes. Serve over a fresh green salad. (Optional: Add chilli flakes for a little kick!)
