Thai Green Curry
A fragrant, vibrant, and authentic curry that is surprisingly simple to whip up for a healthy midweek meal!
How to make
Fragrant Base
Heat a tablespoon of oil in a large wok. Add the Thai green curry paste and fry for 1-2 minutes until the aromas are released.
Simmer & Sizzle
Pour in the coconut milk and bring to a gentle simmer. Add your chicken or tofu pieces and cook through for about 5-7 minutes until tender.
Add the Veg
Stir in the bamboo shoots, green beans, and baby corn. Add the fish sauce and brown sugar to balance the flavours. Simmer until the vegetables are tender but still have a bite.
Finish & Garnish
Squeeze in half a lime and scatter a generous handful of fresh coriander over the top before serving.
Serve in decorative serving bowls over jasmine rice.
