Tomato and Smoked Sausage
One-Pot Smoked Sausage Stew
A hearty, flavourful one-pot meal that is perfect for camping or a simple weeknight dinner!
How to make

Sauté the Base
Heat 4 heaped spoonfuls of mayonnaise in a large pot. Add in 1 chopped white onion and 2 chopped garlic cloves and cook for 5 minutes until softened.

Combine Ingredients
Add in 350g of chopped smoked sausages, 2 tbsp of tomato purée, 2 tbsp of red wine vinegar, 1 tin of chopped tomatoes, a splash of water, 1 vegetable stock cube, and one glass of red wine.

Simmer
Cook for 30 minutes, stirring occasionally, to allow the flavours to develop and the sauce to thicken into a delicious stew.
Serving: Serve hot with fluffy rice or crusty bread. Enjoy!
