Easy Tuna & Sweetcorn Fishcakes
A brilliant way to use leftover mash serving 3 people for a quick, family-friendly midweek meal!
How to make

The Base
Mix cold leftover mash with tuna and Mayo in a large mixing bowl until combined.

Add Flavour
Add herbs, sweetcorn, and chopped spring onions. Mix well and season to taste.

Shape & Coat
Divide into 6 balls. Roll in bread crumbs and press into fishcakes on a board.

Fry & Serve
Heat oil in a frying pan. Fry for 4 minutes until golden and heated through.
