A brilliant way to use up leftover mash for a quick, family-friendly midweek meal!

How to make

The Base

Mix 600 grams of cold leftover mash with two tins of drained tuna and a tablespoon of Mayo in a large mixing bowl.

Add Flavour

Add in your chopped herbs, a handful of frozen sweetcorn, and 3 finely chopped spring onions. Mix well and season to taste.

Shape & Coat

Divide the mixture into 6 equal balls. Roll them into bread crumbs and then press them into fishcakes on a clean chopping board.

Fry & Serve

Heat oil in a frying pan and fry for 4 minutes until golden and heated through.

Serving: Delicious with a squeeze of fresh lemon and a side salad!
